Something Different

So I like avocados and I wanted to see what I could make with em. Mashed potatoes? oh yes. and they were good. though I made them the DAY after St. Patty's which i TOTALLY forgot about which is sooo weird because I adore the Irish ( . . .boys . . .what?) anyways they turned out great.

Next? and a few days later uh . . this weekend actually. Chocolate and Avocado Muffins! mmmm.
let me tell you its hard to mash avocados with a fork.
so i added the other ingredients and then blended it (I love my blender) this batter tasted pretty good just as it is right here. Even though it doesn't look too appealing.

the finished product. I actually was scared they weren't going to get any bigger. But they did and they taste great. A few of my friends/co-workers aren't use to it and pretend they like what I bake but make faces and blah blah blah. They don't have to have any. I had one warmed up with a side of (rice milk) ice cream and it was quite tasty if I do say so myself.
That night for dinner i tried quinoa for the first time. I like it and there's asparagus and carrots and black beans. I mixed the quinoa and black beans in left over pesto sauce. It was an eventful weekend (not really)
This is how I spend my weekends these days . . . exciting ain't it? no wonder I'm still single . . . I'm not complaining (ok maybe I am)

Last Few days

. . . Saturday night we went out for my birthday and a few people met at my house before hand which gave me the opportunity to test out some more vegan recipes one of which is pumpkin bread (from The Kind Diet) . . . ok well it didn't turn out THAT great it TASTED undercooked actually people only tried the one on the right but the one with almonds on top actually doesn't taste that bad .


I also made sangria. I put strawberries and black berries (1st bowl), peaches and pears (2nd bowl) and lemon and limes (3rd bowl) I REALLY wanted to put pomegranate in it too but you have know idea how hard it is to find it on Fraser Street but I did have pomegranate TEA and I steeped that for a bit and added it in . . . lame I know. Then I added 7up or was it sprite (one of the two)






TONIGHT I decided to try making my own pesto sauce. I gotta say it was pretty successful, fun and fast. I used basil leaves, pine nuts, a little bit of almond nuts, salt, pepper, and garlic.


I then scooped out some mushrooms added some pesto . . . .
topped it off with some veggie meat . . .
put them in the oven for a bit and added it to a bowl of barley. They are filling mushrooms. It was fun . . . and I'm done.


I realized I need to do some ACTUAL crafts as fun as all this cooking is . . .i need to getting my hands on some paper, glue, pens . . . artsy fartsy stuff.

HAPPY BIRTHDAY TO ME!

So yesterday was my birthday I am still a bit sick but I woke up that morning my jaw hurt for some reason, I was coughing and had a runny nose and I had to walk in the rain to get to work. When I got to work my boss decided to paint the walls with this ugly poopy greeny yellow colour (just touch ups) and not telling WHICH walls he painted i brushed my arm against one and RUINED my fave white v-neck from forever 21 thinking my day couldn't get any worse it JUST started. My friend let me borrow her car to go home quickly to change but I was still mad and upset. The whole day at work i felt like crap though a customer told me I had a really nice smile which was quite nice. I wasn't the most friendly of people to be around yesterday either (I apologize)

anywho after work I went to a psychic thought it would be fun . . . asked about my "love" life or lack there of . . . got some answers. Went food shopping for tonight as we are going out to PARTY. Went home had my 3 favorite girls over (Meshe my sister, Julz and Shannon) Shannon made me spinach and potato balls (damn I forgot to take pictures) and Julz made me this AMAZING vegan chocolate cake with peanut butter icing (which she will hopefully post)

We chatted, watched Away We Go with the ADORKABLE John Krasinski and Maya Rudolph (ya she's cute too) and as for presents (even though i specifically asked for NOTHING this is what they all gave me. I LOVE THEM ALL

3)the white thing in the back that says Blue is a computer microphone for better music recording.
And Julz made me this awesome card it saws "I'd like to be under the sea" and inside " . . in an octopus' garden in the shade" way to fit a Beatles ref in there Julz.
It was a perfect way to end my birthday and tonight will be even better. I know this cause I woke up feeling great, I didn't feel the need to cough myself to death and my nose isn't running . . .

all that there is too do is clean my place as there are people coming to my tiny place and get the proper ingredients to make sangria

Double Carob Chocolate Chip Cookies

So my post isn't as exciting and cute as Julz's last one but I was so touched that i made her cookies and i think they are better than my first batch.
this time instead of using 2 cups of flour i used 1 1/2 cups of flour and 1/2 cup of carob powder. and half the amount of sugar needed they were WAAAY too sweet last time.
this is also a lame attempt at having a post cuz I feel like i haven't posted in SOOOO long.

Gold, Canada, Gold!



I had to work all Sunday, a shift which directly coincided with the big Canada vs USA gold game.
It was a bummer, but we made the best of it, all morning asking customers for pre-game predictions and drawing it all up onto a chart--it made the day go by really quick!
Once the game started, no one, and I mean NO ONE came into the bakery, so we basically stood in the back and watched the game anyway.
They won, naturally.
